Immediate, Precise Heat
Induction puts energy directly into the cookware rather than heating air around it, so water boils faster than on gas and a setting change registers immediately. At the low end it holds a steady temperature without cycling, making it genuinely capable at melting and long simmers. The usable range from high to low is wider than most cooks expect.
Zone Layout and Flexible Areas
Zone sizes and count determine what you can run simultaneously, with bridge or flexible areas on select models combining two zones for a griddle or long pan.
