Understand the Performance Trade-Off
Physics favors overhead capture, because heat, steam, and grease rise and a hood catches them where they naturally go. A downdraft pulls that air sideways and down, working against it, and effectiveness drops with tall stockpots and on the far burners. This is a genuine compromise, so if an overhead hood is possible, specify one.
