Grates and Heat Distribution
Heavy stainless cooking grates hold heat and produce proper sear marks, with heat plates or flame tamers distributing heat and vaporizing drippings rather than letting them pool. Grate and tamer design is the difference between even cooking and hot spots. Confirm what your model uses and whether replacements are readily available.
