Bosch HIS8057U Features

Industrial-chic Design
The bold freestanding design with pedestal feet and heavy duty knobs makes the industrial-style range a focal point in any kitchen.
Faster Cooking With Induction
When you place a pan on an induction cooktop and turn it on, an electric current travels through a coiled copper wire, which produces and applies heat directly to your pan. Heating the cookware directly prevents heat loss (plus, the area surrounding your pan remains cool to the touch). You'll also notice the ease of clean-up.

Easy To Clean Glass Surface
The glass surface cleans easily with a simple wipe compared to gas cooktops, so keeping your cooktop sparkling clean is easy and convenient.
Air Fry: Uses Convection Fans To Rapidly Circulate Dry, Hot Air
Air Fry uses convection fans to rapidly circulate dry, hot air so you can achieve crispy, delicious results â without the use of added oils in traditional frying.
Even Cooking
A third heating element in the back and a fan circulates heat evenly so you get evenly golden results no matter where you place your pan.

Broil Mode: Uses Intense Heat Radiated From The Upper Element And Delivers The Perfect Char, Sear, And Grill Without The Mess
Broil mode uses intense heat radiated from the upper element and delivers the perfect char, sear, and grill without the mess. It is perfect for meats and bubbling crusts on casseroles.

After searching for 3 years and starting a remodel of the kitchen, I chose the 800 series Induction Range for two reasons: it's pretty and it works. It works very well without being overpriced or pretentious. (Yes there are cheaper ovens, that have good reviews, but none looked right to me. This stove has the right balance for me). The induction top is simple and powerful, that boost function on each burner should be mentioned more, and the functions allow for more control than expected. The oven is similar though the controls are different than what I am used to. This is not a bad thing. I can appreciate simple design with many functions. Now about that fan, I believe that the ranges from a couple of years ago had a different fan. In my opinion the fan is very quiet to "it's on because I have the range set to 500 degrees" - yet it's still not loud. The build is solid and thoughtful. The screen is very easy to read from many angles and from across the room. I am very happy with this purchase.

I cook and bake a lot, for a lot of people. It took years, and finally , the scientific data on air quality problems with gas ranges, to do the switch. Bosch was the one and only induction stove/invection oven I'd consider after spending months looking into all the options, quality, and reviews of all the ranges available. Bosch came up in every category with uber-quality and design and functions, and we ran to the appliance store as soon as we knew which model we wanted.
This stove boils a whole pot of pasta water in a few minutes! It has a low setting for melting chocolate and keeping delicate sauces warm like my old gas range did, but it's more calibrated for perfection: no troubles with the dipping chocolate getting too hot or Hollandaise sauce separating. It works for my new flat-bottom steel wok, and I even get that sear with the resulting great taste, something I've only achieved in the past with my kamado. For all stovetop cooking it's a dream. Temp control of the burners is more precise than you can get with anything else, and when you turn that burner off or take the pan off, that burner area is cool, not hot: perfect scrambled eggs.
The oven is amazing. It has proofing that I've used at 100 degrees for breads and at 110 for Bulgarian Yogurt, and it's so steady that the quality of both is better than it's ever been, and easier, too. For regular baking, the guidelines for which racks and oven settings to use optimally are working beautifully. I use the guideline and everything comes out perfectly done that I've stopped checking so much as I used to: I trust this range.
In short, I wish I'd made up my mind years ago to get this Best Range *ever*, but I'm definitely making up for lost time.
PS: I forgot to mention: on top of all the A-List functionality, it's beautiful.
