Fisher & Paykel Induction Cooktops at Plesser's Appliances
Fisher & Paykel induction cooktops, available at Plesser's Appliances, install into a countertop cutout as a flat glass surface that heats the pan rather than the surface. They deliver the fastest and most responsive cooking in the lineup with the easiest cleanup, including full-surface models with no fixed zones.
Immediate, Precise Heat
Induction puts energy directly into the cookware rather than heating air around it, so water boils faster than on gas and a setting change registers immediately. At the low end it holds a steady temperature without cycling, making it genuinely capable at melting and long simmers. The usable range from high to low is wider than most cooks expect.
Flexible and Full-Surface Configurations
Flexible zones combine adjacent areas into one larger cooking surface, and full-surface models detect cookware anywhere on the glass rather than requiring you to align pans to fixed rings. That changes how you use the cooktop, particularly with oversized or multiple pans. Confirm which configuration your model uses and any power-sharing behavior.
Flat Surface, Cool Kitchen, Safer Surface
A continuous glass surface with no crevices wipes clean in a pass, and because the surface stays relatively cool, spills do not bake on. Pan detection prevents a zone from heating with nothing on it, and child lock is standard on most models. Ventilation is still required.
Cookware Requirements
Induction works only with magnetic cookware. A refrigerator magnet that sticks to the pan base is the test, and aluminum, copper, and most glass will not work. Anyone switching from gas or radiant electric should plan for replacing part of their cookware, a real cost worth accounting for at specification rather than after installation.
Electrical, Cutout, and Clearance Planning
Induction cooktops need dedicated high-amperage 240V service, the most common obstacle in older Long Island homes. Have an electrician confirm panel capacity before ordering. Cutout dimensions, countertop material compatibility, and clearance below for ventilation vary by model. Talk to the team at Plesser's Appliances about electrical requirements and cutout specs before the countertop is templated.
